Oven Roasted Smoked Sausage and Potatoes

Preheat Oven:
Preheat your oven to 400°F (200°C).

Prepare Potatoes:
In a large mixing bowl, toss the potato quarters with olive oil, garlic powder, smoked paprika, thyme, salt, and pepper until evenly coated.

Add Sausage and Onion:
Add the sliced smoked sausage and onion to the bowl. Toss gently to combine with the potatoes.

Arrange on Baking Sheet:
Spread the mixture in a single layer on a large baking sheet. Make sure potatoes are cut side down for maximum crispiness.

Roast:
Roast in the preheated oven for 25–30 minutes. Flip the potatoes halfway through baking to ensure even browning.

Check Doneness:
Potatoes should be golden brown and tender when pierced with a fork, and sausage should be heated through.

Garnish & Serve:
Sprinkle with chopped fresh parsley and serve hot.
