Mix it up – In a large bowl, combine the ground meat, spinach, garlic, Parmesan, breadcrumbs, egg, seasoning, salt, and pepper. Mix until just combined (don’t overwork the meat).
Stuff it – Take a portion of the mixture, flatten it in your hand, place a mozzarella chunk in the center, and shape into a firm ball, sealing the cheese inside.
Sear it – Heat olive oil in a skillet over medium-high heat. Brown the meatballs on all sides for extra flavor.
Bake it – Transfer the seared meatballs to a baking dish. Bake at 375°F (190°C) for 15–20 minutes, or until cooked through (internal temp: 165°F/74°C).
