Add Vegetables & Seasonings: Stir in zucchini (and bell pepper if using), oregano, cumin, salt, and pepper. Cook 4–5 minutes until vegetables are tender-crisp.
Incorporate Tomato Paste: Add tomato paste and stir until well combined. Simmer 2–3 minutes to allow flavors to meld.
