Heat olive oil in a large pot over medium heat.

Add onion, garlic, carrots, and celery. Sauté for 5–6 minutes until softened.

Add Vegetables & Lentils:

Stir in bell pepper, zucchini, and lentils. Cook for 1–2 minutes.

Add Liquids & Seasonings:

Pour in diced tomatoes (with juice) and vegetable broth.

Stir in thyme, oregano, smoked paprika (if using), salt, and pepper.

Simmer:

Bring to a boil, then reduce heat and simmer for 25–30 minutes, or until lentils are tender.

Adjust & Serve:

Taste and adjust seasonings.

Serve hot, garnished with fresh parsley or cilantro.

Thicker Soup: Blend 1/3 of the soup and stir back in for a creamier texture.
