Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking dish with parchment paper.
Make the Crust:
In a bowl, mix flour and powdered sugar. Cut in the cold cubed butter using a pastry cutter or your hands until crumbly. Press the mixture into the prepared pan. Bake for 15 minutes, or until lightly golden.
Prepare the Filling:
In a separate bowl, whisk together sweetened condensed milk, egg yolks, lemon juice, lemon zest, and vanilla extract until smooth.
Bake the Bars:
Pour the filling over the warm crust. Bake for 15–18 minutes, until the center is just set.
Cool & Chill:
Allow to cool completely, then refrigerate for at least 2 hours for the best texture.
Garnish & Serve:
Dust with powdered sugar and optionally top with whipped cream and lemon slices. Slice into squares and enjoy!
