Cook the Sausage: In a large pot, heat olive oil over medium heat. Add sausage and cook until browned, breaking it into small pieces. Remove sausage and set aside.
Sauté Vegetables: In the same pot, add onion and garlic. Cook for 3–4 minutes until softened and fragrant.
Add Broth and Tomatoes: Stir in chicken broth, diced tomatoes, oregano, and basil. Season with salt and pepper. Bring to a simmer.
Simmer the Soup: Return the cooked sausage to the pot. Simmer for 10 minutes to allow flavors to meld.
Add Kale and Tortellini: Stir in chopped kale and tortellini. Cook for 5–7 minutes, or until the tortellini is tender and kale is wilted.
Serve: Ladle soup into bowls and top with grated Parmesan if desired.
