Preheat oven & prepare pan

Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.

Mix dry ingredients

In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

Mix wet ingredients

In another bowl, combine Greek yogurt, melted butter, egg, vanilla extract, lemon zest, and lemon juice.

Combine & fold

Gradually add the wet ingredients to the dry ingredients, mixing until just combined.

Fold in the chopped pistachios.
