Hearty One-Pot Beef Stew with Veggie-Rich Comfort

Sear the Beef:
Heat olive oil in a large pot over medium-high heat. Brown the beef cubes on all sides, about 3–4 minutes per side, for a rich flavor.

Sauté Aromatics:
Add diced onion and garlic to the pot. Cook for 2 minutes until fragrant.

Build the Stew Base:
Pour in beef broth, diced tomatoes, and Worcestershire sauce. Stir in smoked paprika, thyme, salt, and pepper.

Add Vegetables:
Mix in carrots and potatoes. Cover and simmer on low heat for 1.5–2 hours, stirring occasionally, until the beef is tender.

Thicken the Gravy (Optional):
If desired, mix 1 tbsp cornstarch with 2 tbsp cold water and stir into the stew. Cook for an additional 5 minutes until thickened.
