Prepare the Base: In a large pot, heat a little olive oil over medium heat. Sauté the onion and garlic until fragrant and translucent.
Add Broth & Vegetables: Pour in the chicken or vegetable broth. Add the quartered potatoes and sliced carrots. Season with salt, pepper, and Italian herbs if using. Bring to a boil, then reduce heat and simmer for 10–12 minutes, until vegetables are tender.
Add Meatballs & Sauce: Stir in the frozen meatballs and marinara sauce. Simmer for an additional 10–15 minutes, or until meatballs are heated through.
Add Peas: Add the frozen peas and cook for 2–3 minutes more. Taste and adjust seasoning if needed.
Serve: Ladle soup into bowls, garnish with fresh parsley and grated Parmesan if desired.
