Easy Italian Meatball Soup

In a bowl, combine ground meat, breadcrumbs, Parmesan, egg, minced garlic, Italian herbs, salt, and pepper. Mix gently and form into small 1-inch meatballs.

2. Brown the Meatballs

Heat olive oil in a large pot over medium heat. Brown the meatballs on all sides, about 5 minutes. Remove and set aside.

3. Sauté the Vegetables

In the same pot, add onions, garlic, carrots, and celery. Cook for 5 minutes until softened.

4. Build the Soup Base

Add the broth, diced tomatoes, basil, oregano, salt, and pepper. Bring to a gentle boil.

5. Simmer with Meatballs

Return the meatballs to the pot. Reduce heat to low and simmer for 15–20 minutes, until meatballs are cooked through and flavors meld together.

6. Cook the Pasta
