Crispy Swiss Chard Fritters Without the Oiliness

Prep the Chard

Blanch the chopped Swiss chard in boiling water for 1–2 minutes, then drain and squeeze out excess moisture.

This step removes water so the fritters won’t be soggy.

Make the Batter

In a bowl, mix the chard with onion, garlic, eggs, flour, salt, and pepper until combined.

The mixture should be thick enough to hold together but not dry.

Cook Lightly

Heat 1 tbsp olive oil in a non-stick skillet over medium heat.

Spoon small mounds of batter into the pan, flattening slightly.
