Cook the Salmon: Season salmon fillets with salt, pepper, and paprika. Heat olive oil in a skillet over medium-high heat. Sear salmon, skin side down, for 4–5 minutes per side until golden and cooked through. Remove and set aside.
Make the Sauce Base: In the same skillet, melt butter. Add garlic and sauté for 30 seconds until fragrant. Stir in mushrooms and cook for 4–5 minutes until tender.
Add the Cream & Spinach: Reduce heat to medium. Stir in heavy cream and Parmesan cheese (if using). Simmer for 2 minutes, then add spinach and cook until wilted.
Combine & Serve: Return salmon to the skillet, spooning sauce over the fillets. Cook for 2 more minutes until heated through. Garnish with parsley or a squeeze of lemon juice before serving.
