In a large bowl, whisk together flour, sugar, and salt.
Add cold, cubed butter and cut it into the flour until the mixture resembles coarse crumbs.
In a separate small bowl, beat the eggs and mix in 5 tablespoons of cold water.
Slowly add the egg mixture to the flour and butter, stirring until dough begins to form. Add more water if needed, 1 teaspoon at a time.
Divide dough into two equal portions, wrap in plastic, and refrigerate for at least 30 minutes.
2. Preheat Oven & Prep Pan
Preheat oven to 375°F (190°C).
Grease a 9×13-inch baking pan and set aside.
3. Prepare the Apple Filling
Toss sliced apples with granulated sugar, brown sugar, flour, cinnamon, nutmeg, and lemon juice until evenly coated.
4. Assemble the Slices
Roll out one portion of dough into a large rectangle and transfer to the prepared pan, pressing into the bottom and up the sides.
Pour the apple mixture over the dough and spread evenly. Drizzle melted butter over the apples.
Roll out the second portion of dough and place it over the apples. Press edges to seal and cut a few slits in the top crust.
5. Bake
Bake for 40-45 minutes, until the crust is golden and apples are tender. Cover edges with foil if they brown too quickly.
6. Make the Glaze
