In a skillet over medium heat, cook the ground beef and chopped onion until browned and the onion is soft.
Drain excess fat.
Stir in garlic powder, salt, and black pepper. Let the mixture cool slightly.
2. Mix the Filling
Combine the cheddar cheese, diced pickles, ketchup, and mustard with the cooked beef. Mix until evenly distributed.
3. Assemble the Egg Rolls
Place about 2 tablespoons of filling in the center of each egg roll wrapper.
Fold in the sides, roll tightly, and seal. Repeat with remaining wrappers and filling.
4. Air Fry
Preheat the air fryer to 390°F (200°C).
Spray the air fryer basket with cooking spray. Place egg rolls inside without touching.
Lightly spray the tops with cooking spray.
Cook 8–10 minutes until golden brown and crispy.
