1 tsp all-purpose or chicken seasoning

1 tsp paprika

3 cloves garlic, minced

1 tbsp fresh ginger, grated

1 tbsp fresh thyme

2 tbsp green seasoning (blend of scallion, thyme, garlic, pepper)

Juice of 1 lime

Salt & black pepper, to taste

For Cooking:

3 tbsp oil (coconut oil preferred)

1 large onion, chopped

2–3 sprigs thyme

2 medium potatoes, peeled & diced

1 Scotch bonnet pepper (whole for flavor, sliced for extra heat)

2 cups chicken stock or water

1 bay leaf

½ cup coconut milk
