5 chives, finely chopped
1 bulb fennel, thinly sliced
Zest of 1 mandarin
Juice of 1/4 cup mandarin (or about 1 mandarin)
4 mandarins, peeled and segmented
8 oz burrata cheese
2 tbsp olive oil
1 tbsp white wine vinegar or lemon juice
Salt, to taste
Freshly ground black pepper, to taste
