Prepare Egg Mixture: In a large bowl, whisk together eggs, milk, salt, pepper, and paprika. Stir in shredded cheese.
Combine: Add sautéed vegetables to the egg mixture and stir gently to combine.
Bake: Pour the mixture into the prepared baking dish. Bake for 25–30 minutes, or until the eggs are set and the top is lightly golden.
Cool and Serve: Let the casserole cool for 5 minutes before slicing. Serve warm.
