Baked Sesame Lime Salmon with Roasted Sweet Potatoes

Preheat Oven: Preheat the oven to 400°F (200°C).

Prepare Sweet Potatoes: Toss the cubed sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper. Spread them evenly on a baking sheet and roast for 20 minutes.

Prepare Salmon Glaze: In a small bowl, whisk together olive oil, soy sauce, lime juice, honey, sesame oil, garlic, and ginger.

Bake Salmon: Remove the sweet potatoes from the oven after 20 minutes. Push them to the side of the baking sheet and place the salmon fillets on the same sheet. Brush salmon generously with the sesame-lime glaze and sprinkle with sesame seeds.

Continue Roasting: Bake for an additional 12–15 minutes, or until the salmon is cooked through and flakes easily with a fork.

Serve: Plate the salmon with roasted sweet potatoes, garnish with green onions and lime wedges if desired.
