Apple-Chocolate Mousse

Place the chopped apples in a saucepan with a splash of water. Add cinnamon sticks and star anise if using. Cook over medium heat until the apples are soft and slightly caramelized. Remove the spices once done.

Melt the Chocolate:
In a heatproof bowl over simmering water (double boiler), melt the dark chocolate until smooth. Remove from heat.

Blend the Mousse:
Combine the cooked apples and melted chocolate in a blender or food processor. Add orange zest if desired. Blend until smooth and creamy.

Chill:
Pour the mousse into serving glasses or bowls. Refrigerate for at least 1–2 hours until set.

Serve:
Top with whipped cream, chocolate shavings, or fresh apple slices before serving.
