A Vegetarian Delight: Cabbage and Egg Breakfast Tortilla

Step 1: Prepare the Vegetables

Heat a tablespoon of olive oil in a non-stick skillet over medium heat.

Add the chopped onion and garlic, sautéing until fragrant and translucent.

Add the carrot and cabbage, cooking until tender, about 5–7 minutes.

Season with salt and black pepper to taste.

Step 2: Prepare the Eggs

In a bowl, beat the 3 eggs lightly with a pinch of salt and pepper.

Pour the eggs evenly over the cooked vegetables in the skillet.

Step 3: Cook the Tortilla

Reduce the heat to low and cook until the eggs are mostly set, about 5–6 minutes.

Using a spatula, carefully lift the edges to allow uncooked eggs to flow underneath.

Once the eggs are fully cooked, sprinkle the chopped green onions on top.

Step 4: Serve

Slide the tortilla onto a plate and slice into wedges.
