Hearty Navy Bean and Ham Hock Soup

Soup Base:

1 large onion, chopped

2 celery stalks, chopped

2 cloves garlic, minced

2 carrots, peeled and chopped

Soup Ingredients:

1 lb (450 g) dried navy beans, soaked overnight and drained

1 smoked ham hock (about 1–1.5 lbs / 450–680 g)

6 cups (1.4 L) chicken or vegetable broth

2 bay leaves

1 tsp dried thyme

Salt & pepper to taste
